Afternoon Tea aficionados rejoice – the Mandarin Oriental’s Executive Pastry Chef, Paul Thiéblemont, is bringing his renowned pedigree and skills from London to launch a limited edition Afternoon Tea experience exclusive to Crown Melbourne’s Conservatory – for a limited time only.

Touted as a true rising star of the pastry scene, Thiéblemont has honed his skills from all corners of the globe. Before his time as Executive Pastry Chef at one of London’s most celebrated hotels, Thiéblemont worked as Second in Command for the 2009 World Champion of Pastry Jérome Langillier, and is currently global consultant to Weiss Chocolate.

Bringing a dash of London flavour and elegance to Crown Melbourne’s already lavish setting, Thiéblemont’s sweet delicacies will complement the Conservatory’s existing savoury offering to elevate the Afternoon tea offering to a new level of decadence. Flavours will be aplenty, with guests able to enjoy creations such as Battenburg Cake, where pureed strawberry sits beside soft vanilla sponge. Another is the Pear and Oryola, where the crunch of oryola ganache is placed atop sweet vanilla mousse and finished with an almond glaze.




According to Thiéblemont he is thrilled to bring his modern twist on English Afternoon Tea to Crown Melbourne, a tradition that originated in Britain in the 1800’s.
